Lemon Blueberry Coffee Cake

Since Vancouver is renowned for its constant rain, I guess I really shouldn't be surprised/upset that it's absolutely disgusting outside right now. Nevertheless, this isn't the type of day that you want to go frolic about town in a nice outfit. This is the type of day you want to sit inside, hang out with your doggy, and bake. So I did!

Step 1: Be sure to have an assistant on hand.
Bailey does a fantastic job of cleaning up floors, so he got enlisted.


Step 2) Grease a 13- x 9-inch baking dish.

Step 3) In a large bowl, add 3 cups of flour, 1 cup of sugar
1 tbsp of baking powder, 1 tsp of baking soda, 1/2 tsp salt,
and the grated rind from 2 medium lemons.

Step 4) Add 1 can (385 ml) of evaporated milk, 2 slightly beaten eggs, and
2 tbsp of vegetable oil to the dry mixture. Stir until just moistened.

Step 5) Spread half the batter onto the bottom of the pan. Add blueberries
on top, and then gently spread remaining batter over blueberries.

Step 6) Drizzle topping (1/3 cup sugar, 1 1/2 tsp cinnamon, 2 tbsp lemon juice)
to top of cake. Bake for 45 minutes until cake tester comes out clean.
